Milk Pitchers
Milk pitchers and steaming jugs for latte art and consistent texturing, at home and behind a bar. How to choose a pitcher
Size first. Match the jug to the drink, not to ambition. A 0.35 to 0.4 litre jug is right for a single flat white or cappuccino; steaming a small volume of milk in a large jug never textures properly. Around 0.5 to 0.6 litres covers two drinks at once, which is the practical size for most households and the reason the Motta Tulip 500ml and the Joefrex 0.59L / 20oz exist. Then the spout. Latte art is mostly pouring, and pouring is mostly the spout. Too wide and the milk floods the surface before a pattern forms; too narrow and it will not release when you want it to. Then temperature. Overheated milk is the most common and least recoverable fault in home coffee: scald it and the sweetness is gone for good. Most people guess by touch and stop too late. Milk that has been sitting out in a warm kitchen textures badly. Take it straight from the fridge, and if the room is hot, chill the jug too — a cold jug buys you a few more seconds of stretching before the milk hits temperature, which is exactly the window where microfoam forms.
